Jollof Rice

Jollof Rice is a popular dish from West Africa, consisting of rice cooked in a rich tomato and pepper sauce, enhanced with spices and seasonings. It is often served with grilled vegetables, meat, or chicken, and is known for its vibrant orange color and distinctive flavor
Ingredients
- 2 Cup of Basmati rice
- 0.25 Cup of oil
- 1 Piece of onion
- 1 Teaspoon of garlic
- 1 Tablespoon of Tomato paste
- 4 Piece of Tomato
- 1 Piece of Bell pepper
- 2 Piece of chicken bouillon cubes
- 1 Teaspoon of Thyme powder
- 1 Teaspoon of turmeric
- 1 Teaspoon of Salt
- 1 Teaspoon of Ground black pepper

In a large pot, heat the oil over medium heat, then add the onions and sauté until they are soft and golden. Next, add the minced garlic and tomato paste, and cook for an additional minute until the ingredients are well combined

Next, add the chopped tomatoes, diced bell peppers, and optional chili pepper. Stir in the chicken stock cubes, thyme, turmeric, salt, and black pepper. Mix the ingredients well and let the sauce simmer over low heat for about 10 minutes until it thickens

Next, add the rinsed rice to the sauce and stir until all the ingredients are well combined. Pour in 4 cups of water or chicken broth, then add the bay leaf (optional). Allow the rice to come to a boil over medium heat

Once the rice starts boiling, reduce the heat and let the rice cook on low heat for 20 minutes until it is fully cooked and absorbs all the liquid

After cooking, remove the bay leaf and gently stir the rice. Serve it with roasted vegetables, meat, or chicken as desired
