Baked Rice Pudding (Roz Ma'ammar)

Al-Arz Al-Ma'ammar is a traditional Egyptian dish known for its richness and delicious taste. The history of this dish dates back to the Egyptian countryside where it was prepared in traditional pottery. It is considered a special dish for occasions. It is made using rice, milk, and ghee or butter.



Ingredients

  • rice 3 Cup of rice
  • milk 3 Cup of milk
  • yogurt 1 Cup of yogurt
  • cream 2 Tablespoon of cream
  • Butter 2 Tablespoon of Butter
  • Salt 1 Tablespoon of Salt

Instructions

    We wash the rice thoroughly with water, then drain it and set it aside

    In a pot on the stove, we put 3 cups of milk, 2 cups of water, and add 2 tablespoons of butter, 2 tablespoons of cream, and a teaspoon of salt. We stir the ingredients well

    In a suitable baking dish, we grease it with butter, then add the rice and pour the milk mixture over it. We stir gently, then optionally add a cup of yogurt. We place the dish in a preheated oven for about 45 minutes or until the rice becomes tender, absorbs all the liquids, and the top turns golden and crispy

    We can add pieces of liver and gizzards or small pieces of meat after cooking them with the rice
