Stuffed Zucchini

Stuffed zucchini is a traditional dish where zucchinis are hollowed out and filled with a delicious mixture of rice, onions, tomatoes, and spices. The zucchinis are arranged in a pot, covered with broth, and then cooked slowly until the rice becomes tender and the flavors blend together. This dish is popular in Egypt and across the Middle East

Ingredients

  • zucchini 1 Kilogram of zucchini
  • rice 0.5 Kilogram of rice
  • onion 2 Piece of onion
  • garlic 1 Teaspoon of garlic
  • tomato juice 4 Cup of tomato juice
  • Tomato paste 2 Tablespoon of Tomato paste
  • Dill 1 Cup of Dill
  • Parsley 1 Cup of Parsley
  • coriander 1 Cup of coriander
  • Salt 1 Teaspoon of Salt
  • Ground cumin 1 Teaspoon of Ground cumin
  • Ground black pepper 1 Teaspoon of Ground black pepper
  • Chicken broth 3 Cup of Chicken broth
  • Butter 2 Tablespoon of Butter
  • oil 1 Tablespoon of oil

    Wash the zucchini and hollow it out using a corer

    To prepare the stuffing, in a pot on the stove, put 2 tablespoons of butter and 1 tablespoon of oil, then add the finely chopped onion and cook until it wilts. Then add the tomato juice, 2 tablespoons of tomato paste, and 1 teaspoon of garlic. Add the spices (salt, black pepper, cumin, and stuffing spices) and stir the mixture well. Let it cook until it thickens

    Fill each zucchini with the stuffing without pressing too hard to prevent them from bursting during cooking

    Arrange the zucchini neatly in the pot, then add the broth (chicken or beef, depending on what's available) and place a heavy plate on top. Let it cook on low heat for about 45 minutes or until the rice is fully cooked

    If chicken or beef broth is not available, you can add water with a tablespoon of tomato paste, salt, black pepper, and a cube of ready-made chicken broth
