Yellow Lentil Soup

This is Egyptian Yellow Lentil Soup with Vermicelli and Onions. It's known for its smooth texture and rich flavor from lentils and spices. Typically served hot, it can be enjoyed as a light meal or a main dish, making it perfect for cold days or hearty meals

Ingredients

  • Vermicelli 1 Cup of Vermicelli
  • Yellow lentils 0.5 Kilogram of Yellow lentils

    We start by washing the lentils well under cold water. Then, we put them in a large pot along with one tomato, one onion, four cloves of garlic, and two carrots sliced ​​into rounds. Next, we add water. Once it boils, we reduce the heat and let it simmer for about 20 minutes until it becomes tender

    After that, we let it cool slightly, then we blend it in a blender until we get the desired soup consistency. Next, we transfer it back to a large pot

    In a skillet, we heat a tablespoon of oil and a tablespoon of butter. Then, we add a cup of vermicelli pasta along with a small onion finely chopped, a teaspoon of minced garlic, salt, and cumin to taste. We sauté this mixture until the vermicelli is golden brown and the onions are translucent. Next, we add this mixture to the lentil soup and stir well until all the flavors are combined

    Serve the hot yellow lentil soup in a serving dish, and garnish with chopped parsley. It can be served with bread as a side dish or as a main course
