Maqluba

Maqluba is one of the most famous traditional dishes in Palestine, known for its delicious taste and attractive presentation

Ingredients

  • chickens 2 Kilogram of chickens
  • Basmati rice 2 Cup of Basmati rice
  • eggplant 2 Piece of eggplant
  • potatoes 2 Piece of potatoes
  • onion 2 Piece of onion
  • Seven spices 1 Tablespoon of Seven spices
  • Ground black pepper 1 Teaspoon of Ground black pepper
  • Salt 1 Tablespoon of Salt
  • turmeric 1 Teaspoon of turmeric
  • Ground cumin 1 Teaspoon of Ground cumin
  • olive oil 3 Tablespoon of olive oil
  • Tomato 2 Piece of Tomato

Instructions

    In a large pot, heat olive oil and add the chicken pieces. Stir for a few minutes until the color changes. Then add boiling water to the chicken, and add bay leaves, salt, and black pepper. Let it cook on medium heat until the chicken is done. Then remove the chicken from the broth and set them aside for later use

    Cut the eggplant and potatoes into slices, then fry them in hot oil until they turn golden. After that, remove them from the oil and set them aside

    Wash the rice well and soak it in warm water for 30 minutes. Then drain the water and add the spices (salt, black pepper, turmeric, cumin, and seven spices) in the desired amount

    To assemble the Maqluba, in a large and deep pot, place a layer of tomato slices, then onions, followed by the chicken. Add a layer of potatoes, then a layer of eggplant. Finally, add the soaked rice with spices on top of the vegetables and chicken. Cover it with about 1 cm of chicken broth

    Place the pot on high heat until the broth boils. Then, reduce the heat to low, cover the pot, and let it cook for about 30 minutes until the rice is cooked and absorbs the broth

    After the rice is cooked, let the Maqluba rest for 10 minutes. Then, carefully flip the pot onto a large serving plate

    Note: Quantities can be adjusted as desired, and chicken can be substituted with meat
