Zaalouk

Zaalouk is a traditional Moroccan dish mainly consisting of eggplant, tomatoes, and roasted peppers. It is prepared by mixing these vegetables with garlic, spices, and olive oil. Zaalouk is considered a healthy and delicious dish, usually served as an appetizer or side dish

Ingredients

  • eggplant 2 Piece of eggplant
  • Tomato 3 Piece of Tomato
  • green pepper 1 Piece of green pepper
  • Chili pepper 1 Piece of Chili pepper
  • garlic 1 Teaspoon of garlic
  • olive oil 2 Tablespoon of olive oil
  • Ground cumin 1 Teaspoon of Ground cumin
  • Paprika 1 Teaspoon of Paprika
  • Salt 1 Teaspoon of Salt
  • Parsley 1 Tablespoon of Parsley

Instructions

    Cut the eggplant into small cubes, sprinkle them with a little salt, and let them sit for 15 minutes to get rid of excess water. Then, wash and dry them well

    Preheat the oven to a high temperature. Place the eggplant and peppers on a baking sheet greased with olive oil and roast them for 20 minutes

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add a teaspoon of minced garlic and sauté until it turns golden. Then, add the tomatoes, cut into small cubes, and cook until the liquids evaporate and the mixture thickens

    Next, add the roasted eggplant and peppers, after cutting them, to the tomatoes. Then add the spices (salt, cumin, paprika) and mix the ingredients well. Let them cook for 10 minutes. Finally, garnish with chopped parsley

    Serve Zaalouk hot or cold as an appetizer or side dish
