    Wash the chickens well, then soak them in a solution of salt, sugar, and lemon slices for at least half an hour, and finally wash them again thoroughly

    We grate one large onion and two tomatoes, mix them with a teaspoon of salt and black pepper, then put them on the chickens and leave them to marinate for at least half an hour

    The onion is sliced ​​thinly, the potatoes are sliced ​​into medium-thick slices, the garlic is chopped finely, and the green pepper is sliced ​​into small pieces (optional)

    In a baking dish, add the onion, garlic, salt, black pepper, seven spices, and chicken broth (optional), mix the ingredients together, add the potato slices, place the marinated chickens on top, then add 2 cups of tomato juice and a tablespoon of tomato paste (optional), and a cup of boiling water

    Cover it and put it in a preheated oven until it's well cooked, then raise it under the broiler for about a quarter of an hour. The total cooking time is around one and a half to two hours
