Spinach, Feta, and Rice Casserole is a delicious and nutritious dish that combines the flavors of fresh spinach and feta cheese with rice, which adds a rich texture
Ingredients
- 1 Cup of rice
- 2 Tablespoon of olive oil
- 1 Piece of onion
- 2 Piece of Spring Onion
- 1 Teaspoon of garlic
- 400 Gram of Spinach
- 1 Cup of Feta cheese
- 2 Piece of egg
- 1 Teaspoon of Salt
- 1 Teaspoon of Ground black pepper
- 0.5 Cup of Dill
- 1 Piece of Lemon

In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes tender, about 5 minutes

Next, add the chopped spinach to the skillet with the onion and garlic. Cook until the spinach is wilted (if using fresh spinach) or until the liquid has evaporated (if using frozen spinach)

Next, add 2 cups of water, then the rice, lemon juice, salt, black pepper, and dried thyme. Bring the mixture to a boil over high heat, stirring occasionally, then add the dill

Next, transfer the spinach mixture to a baking dish (you can whisk 2 eggs and add them to the mixture if desired). Sprinkle the remaining half cup of feta cheese on top, then place the dish in a preheated oven for about 20 minutes, or until the surface is set
