Lablabi

Lablabi is a simple and nutritious Tunisian dish, widely popular, especially during winter. It is a warm meal often served as breakfast or dinner. Lablabi is primarily made from boiled chickpeas and is served with pieces of dry bread soaked in the seasoned chickpea broth.
Ingredients
- 2 Cup of Chickpeas
- 1 Tablespoon of garlic
- 3 Tablespoon of harissa
- 1 Tablespoon of Ground cumin
- 4 Tablespoon of olive oil
- 1 Teaspoon of Salt
- 4 Piece of Toast
- 2 Piece of egg
- 100 Gram of tuna
Instructions

Soak the chickpeas in water overnight, then rinse them well and place them in a pot with enough water to cover them. Bring the water to a boil, then reduce the heat and let the chickpeas simmer for about an hour or until fully cooked

When the chickpeas are almost fully cooked, add a tablespoon each of minced garlic, cumin, and harissa, along with salt to taste. Allow the chickpeas to cook for an additional 10 minutes to let the flavors meld together

Cut the stale bread into cubes and place them in serving bowls

Pour the chickpeas and broth over the bread cubes, ensuring the bread is soaked with the chickpea broth. Then, add a little extra harissa and some tuna

Then add a boiled egg to each serving bowl (preferably soft-boiled for a creamy texture when served with the lablabi). You can also garnish the dish with olives
